Multigrain Cereal with Sunflower Seeds and Fruit

Makes 6 servings

Ingredients:

1/4 cup ground flaxseed
1-1/2 cups steel-cut (Irish) oats
1/2 cup golden raisins
1/2 cup dried cherries
1/3 cup oat bran
1/3 cup wheat germ
1/3 cup sunflower seed kernels
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
8 cups water

Instructions:

Combine all ingredients in a large saucepan and bring to a boil. Cover and reduce the heat, simmering for about 20 to 25 minutes, stirring occasionally. Uncover and cook another 2 minutes or until thick, stirring constantly. Optional: Top with sliced banana.

Time-saving idea: Make a large batch on a Sunday night and keep it in the refrigerator to have throughout the week. The cereal will get thick in the fridge, so add a little water or milk before reheating.
